About US egg products prices: liquid, frozen, dried
Egg products are shell eggs that have been broken and processed into liquid, frozen or dried egg, the form bakeries, foodservice and food manufacturers buy by the pound. This is the downstream breaking market shell eggs flow into, priced by USDA in cents or dollars per pound, a different unit and a different market from the shell-egg benchmark. When shell demand runs hot, cartoning for the retail shelf can pay more than breaking, so the shell and breaking markets pull on each other.
